This miso is carefully handcrafted by Mitsu-ura-jouzou who have been making miso since the Edo period in Yamaguchi Prefecture. It is made using mugi-koji (malted barley) instead of rice koji, which gives it a sweeter and lighter flavour than normal miso. Made with barley, soy beans, and salt, the barley malt adds umami and perfect sweetness. Rich in flavour. Limited stock available at CIBI & our online-store.
