Kobo Aizawa - Skimmer ladel (Akutori strainer)
This skimmer ladle made from a fine wire mesh is used for removing unwanted bits of food or skimming the foam gathering on the surface of liquids while cooking. It comes in handy for picking up random bits of batter in the oil while making tempura or kara-age, or skimming the foam from miso soup to give it the perfect aesthetic touch. As you know, much of the delight in Japanese cooking is in the presentation.....as well as eating.
